In a pot, melt the chocolate in bain-marie and set aside.
Make a glaze with the egg white, powdered sugar, and green and white coloring, and pour them in a pastry bag with a piping tip.
Pour the chocolate over the fresh strawberries and allow them to cool.
Dip each cookie individually.
With the strawberries and cookies already covered, put the strawberries on top of the cookies with the wider side down, and repeat with every cookie.
With the pastry bag and the green glaze first, draw the hat strip.
With the pastry bag and the yellow glaze, draw the buckle.
Decorate and serve.
