Ingredients

  • 1 egg
  • 1 ½ cup whole wheat flour
  • Zest of 1 lemon
  • ½ tsp salt
  • 4 fl oz or ½ cup skim milk
  • 3.5 oz blueberries
  • 2 tsp baking soda
  • ½ tsp powdered Stevia

Preparation

Beat the egg and Stevia thoroughly, then add the milk and the rest of the dry ingredients, and keep beating.

Lastly, add the blueberries and mix with a spoon.

Pour the mixture into a buttered metallic baking pan for 6 muffins, or into individual silicone baking molds.

Put in the oven preheated to 375°F for 15-20 minutes, until you can insert a toothpick or a match and it comes out clean.

Allow to cool and remove from the mold.
