Ingredients

For the dough:

  • 2.6 oz salted butter at room temperature
  • 1/2 cup white granulated sugar
  • 1 egg
  • 2 cups all-purpose flour

For the filling:

  • 1 lb white cheese
  • 1 medium lemon, its zest and juice
  • 2 tbsp white granulated sugar
  • 2 eggs
  • Fresh seasonal fruit for decoration

Preparation

Preheat the oven to 360°F.

For the crust:
Beat the butter and sugar until smooth and foamy.

Add the egg and continue beating until completely combined.

Add flour little by little (you may not need all of it) and mix with your hands until obtaining a dough.

Put the dough in a previously buttered baking pan, and pre-bake for 10 minutes.

For the filling:
Lower the oven temperature to 300°F.

Blend all the ingredients for the filling in a blender, that is: white cheese, sugar, eggs, lemon zest and juice. Blend until obtaining a smooth paste. Pour this mixture over the pre-baked dough and bake for 45 minutes in the preheated oven or until set and slightly brown.

Allow to cool before unmolding, decorate with fruit, and enjoy!
