Waffles:
Separate the yolks from the whites. Beat the egg whites until they form stiff peaks and set aside. Mix the milk, melted butter, sugar, and egg yolks in a medium bowl. Beat until the sugar dissolves.
Put all the dry ingredients (flour, baking powder, and salt) in a large bowl and add the previously mixed wet ingredients.
Mix all the ingredients until the dough has no lumps. Then, with a wooden spoon and in folding motion, mix the egg whites set aside with the dough until they form stiff peaks. At this point, you should not beat it or the dough will not rise.
When the dough is ready, cook the waffles in a waffle maker. Normally, this takes 2-3 minutes, but it depends on the appliance, so it is best to follow the manufacturer’s instructions.
Berry syrup:
First put the ingredients for the syrup in a small pot and bring to a boil. Once it boils, lower the heat to medium-low and simmer for 5 minutes until it is reduced and thick enough to cover the back of a spoon.
First arrange the waffles on a plate, then pour the berry syrup on top and decorate with fresh berries of your choice.
