TUNA TIRADITO WITH PEACH PEBRE SAUCE

Ingredients

FOR THE PEBRE SAUCE:

  • 7 oz cherry tomatoes
  • 1 scallion, including the green part
  • 1/2 red and/or yellow bell pepper
  • 1 cup coriander
  • 1 peach
  • 1 bunch of chives
  • Olive oil
  • White vinegar
  • Salt

FOR THE DRESSING:

  • 1/2 cup olive oil
  • 4 tbsp lemon juice
  • 4 tbsp vinegar
  • 1 tbsp mustard
  • Salt
  • Pepper
  • Lemon
  • Unflavored yogurt
  • 1 tbsp mustard
  • 1 tsp honey
  • Slices of tuna
  • Broad beans
  • Blackberries
  • Bottled pebre sauce

Preparation

FOR THE PEBRE SAUCE:

Thinly dice everything and put in a bowl: 7 oz cherry tomatoes, 1 scallion (including the green part), 1/2 red and/or yellow bell pepper, 1 cup of coriander, 1 peach, 1 bunch of chives, olive oil, white vinegar and salt.

FOR THE DRESSING:

Mix 1/2 cup of olive oil, 4 tablespoons of lemon juice, 4 tablespoons of vinegar, 1 tablespoon of mustard, salt and pepper. If you like it more sour, add more lemon juice.

Put 1 tablespoon of unflavored yogurt, 1 tablespoon of mustard and 1 teaspoon of honey in a plate. Mix and smear the whole plate. Cover with tuna slices.

Add broad beans, blackberries and pebre sauce on top of the fish. Pour the dressing right before eating!
