Put 7 oz of white cheese in a food processor with 3 saltine crackers, 1 teaspoon of turmeric (to add color), 1/2 can of evaporated milk, 1/2 natural yogurt, 2 tablespoons of honey mustard, salt, pepper and the juice of two lemons and blend until obtaining a smooth sauce.
FOR THE DRESSING:
In a cup, pour 1/4 cup of olive oil, 3 tablespoons of soy sauce, 2 tablespoons of vinegar (whichever you have), 4 tablespoons of mandarin, 1 tablespoon of Dijon mustard and mix.
Slice 2 or 3 pieces of tuna.
In a large, flat plate, pour a layer of huancaina sauce and then arrange the tuna slices, avocado slices, arugula leaves, figs, raspberries and pomegranate, and lastly pour the dressing on top.
