Blend all the ingredients, except for the chocolate and coconut oil, and fill ice cream molds. You can use plastic cups or any other plastic container with the desired shape.
Put the molds in the freezer for 2 hours, remove, and insert the popsicle stick in the middle, refrigerate for 2 more hours.
Melt the chocolate with coconut oil in bain-marie. Take the popsicles out of the freezer and put in the bowl with melted chocolate, dipping the popsicle completely. Since it is frozen, the chocolate will solidify immediately.
Refrigerate again or serve immediately.
