Chop the Hortifrut strawberries, red pepper, and two scallions.
Sauté in butter, first the scallions, then the bell pepper, and once the scallions are soft, add the strawberries.
Add salt and pepper to taste, add 2 cups of water, and stir until it boils.
Mince the coriander and scallion stems.
Serve the soup hot and add the coriander and scallion.
