For the sauce:
Add olive oil, 1 small onion, 1 small carrot, 1/2 bell pepper diced into very small squares. Season with salt and pepper and cook until the onion is translucent. Add 1 tablespoon of curry, 1 tablespoon of turmeric, 1/2 tablespoon of cardamom and 1/2 tablespoon of cinnamon. Remove from the heat and set aside.
Add 1 lb 2 oz of ground beef with hopefully more than 10% fat (you can grind it at home), the previous spiced sauté, 1/2 cup of minced coriander, 1/3 cup of chopped mint, mix everything well with your hands as if you were kneading. Form meat balls and refrigerate for at least 30 minutes.
Brown the meat balls in the same frying pan you already used, with more olive oil and over very high heat. When browned on both sides, add water little by little so they cook and don’t dry out.
You can eat them with natural yogurt sauce, 1/2 cup of mint and/or coriander, 2 tbsp of vinegar, salt and pepper. Pomegranates are the perfect combination for these flavors!
