SHRIMP CEVICHE WITH MANDARIN DRESSING

Ingredients

FOR THE DRESSING:

  • 1/3 cup olive oil
  • 4 tbsp lemon juice
  • 4 tbsp white vinegar (or the one you have at home)
  • 2 tbsp Dijon-style mustard
  • 6 tbsp mandarin juice
  • 4 tbsp soy sauce
  • Salt
  • Pepper

 

  • 1 lb 2 oz large shrimp
  • 1 large avocado, diced
  • 3 o 4 sliced palm hearts
  • 1 cup baby arugula
  • 1/2 cup blueberries
  • 1/2 cup pomegranate

Preparation

FOR THE DRESSING:

In a small bowl put 1/3 cup of olive oil, 4 tablespoons of lemon juice, 4 tablespoons of white vinegar (or the one you have), 2 tablespoons of Dijon-style mustard, 6 tablespoons of mandarin juice, 4 tablespoons of soy sauce, some salt and pepper. Emulsify to bring everything together.

In a bowl, put 1 lb 2 oz of large shrimp, 1 large avocado, diced, 3 o 4 sliced palm hearts, 1 cup of baby arugula, 1/2 cup of blueberries, and 1/2 cup of pomegranate.

Mix with the dressing right before serving. Serve in nice glasses or a large dish.
