Ingredients

  • 1 lb salmon
  • Sesame oil

For the ceviche dressing:

  • 1 lemon
  • 1 tbsp mayonnaise
  • 1 tbsp natural yoghurt
  • 1/2 tbsp mustard
  • 2 tbsp olive oil
  • 2 or 3 cubes of raw fish
  • 2 tbsp chives
  • 1 tbsp capers
  • Salt
  • Pepper

Preparation

Dice 1 lb of salmon. The easiest way to do it is with the fish semi-frozen, that way the cubes with be square and perfect. Add 2 tablespoons of sesame oil and mix with the fish.

For the ceviche dressing:

In the blender or food processor, put the lemon juice, 1 tablespoon of mayonnaise + 1 tablespoon of natural yoghurt + 1/2 tablespoon of mustard + 2 tablespoons of olive oil + 2 or 3 cubes of raw fish + 2 tablespoons of chives + 1 tablespoon of capers + salt + pepper. Blend to make a smooth sauce.

Place the raw salmon in a plate with sesame oil and pour the sauce over the fish, then put some julienned onion + capers + coriander + blueberries on top.
