Add 3.5 oz of passion fruit pulp, 1/3 cup of orange juice, 2 tablespoons of brown sugar, 4 tablespoons of soy in a small pot and cook until it thickens (about 12-14 min). Once done, strain and allow to cool.
When the sauce is cool, add 5 tablespoons of olive oil, 2 tablespoons of honey mustard (or the one you have) and emulsify. Check the salt.
Thinly slice 1 or 2 pieces of salmon. You can use the fish you want. The trick to cut slices thin enough is using a good knife and the fish should be semi-frozen.
Put a layer of passion fruit dressing in a plate, then put the fish layers and finish with blueberries, toasted sesame seeds, red onion, mint leaves and edible flowers.
