Rinse the rough bindweed fruit thoroughly and remove the stems.
Put the rough bindweed fruit in a pot, add sugar and lemon juice (the lemon is used to give it an intense red color) and mix well. Cover the pot and allow to set for at least 2 hours, the idea is that the rough bindweed fruits release their juice.
Uncover the pot and stir the mixture for a while. Heat the pot over high heat until it comes to a boil.
Lower the heat and cook stirring until the jam is ready. To know when the jam is ready, put a spoonful in a plate, allow to cool for a while and sprinkle with sugar. If it doesn’t sink, it’s ready
Carefully bottle the jam, allow to cool and enjoy!
