Coriander paste:
Fry the rice in oil until transparent. Pour 3 cups of water in a pot. Simmer until rice is soft, for about 20 minutes.
Meanwhile, prepare the coriander paste. Blend all ingredients until obtaining a homogeneous mixture (if it turns out too thick, add some more water). Mix the coriander paste with the rice.
For the assembly:
With the help of a round mold about 4 inches in diameter, previously oiled, fill half of the mold with green rice and add a layer of blueberries over it. Then add another layer of green rice over the blueberries. Remove the round mold and decorate with toasted almonds and blueberries.
