Quinoa Croquettes with Strawberries

Ingredients

  • 2 cups quinoa, cooked al dente
  • 6 Hortifrut strawberries, roughly chopped
  • 2 tbsp grated goat cheese
  • 1 carrot, coarsely grated
  • 3 tbsp basil, minced
  • 2 tbsp almonds, roughly chopped
  • ½ cup breadcrumbs
  • Salt and pepper to taste
  • 4 eggs, slightly whisked
  • Oil to fry the croquettes
  • 2 tbsp natural yoghurt

Preparation

Mix the quinoa with strawberries, goat cheese, grated carrot, basil, and almonds. Add salt and pepper to taste.

Add the eggs and stir until smooth. Then heat a bit of oil in a wide pan.

Form the croquettes with your hands and roll them through the breadcrumbs.

Fry the croquettes on one side until brown. Then carefully flip them with a spatula, and brown the other side.

Put the natural yoghurt in a small bowl with a pinch of salt to dip the croquettes.

We recommend to serve them together with a spinach and strawberry salad.
