Season the pork loin with salt and pepper to taste, then coat with flour and shake to remove the excess flour.
Brown the pork loin in a pan with plenty of olive oil on all its sides over high heat.
Preheat the oven to 360°F.
Put the pork loin in a baking dish and scatter thickly julienned onions around it.
Add white wine and put in the oven for 25 minutes. Then flip the pork loin and add berries and apples cut into quarters. Roast for 25 more minutes.
Cut the pork loin into thick slices and serve with the berries and apples mixture.
