Ingredients

Vinagrette:

  • 1/3 cup blackberries
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp water
  • 1 tsp Dijon mustard
  • 1/2 tbsp honey
  • Salt

Salad:

  • 1 lb mixed greens
  • 1 avocado
  • 1 cup raspberries
  • 1/2 fennel
  • 1/4 cup pistachios

Preparation

Vinagrette:
Put all the ingredients together in a blender and blend until smooth, adding salt to taste.

Salad:
Thinly slice the fennel with a mandoline slicer. In a large dish, put the mixed greens as a base, then the fennel slices, avocado slices, raspberries, and pistachios. You can dress the whole salad or allow each person to add the blackberry vinaigrette.
