Ingredients

Dough:

  • 2 packages butter biscuits
  • 3.5 oz butter

Filling:

  • 1/3 cup raspberries
  • 1/3 cup golden raspberries
  • 1/3 cup blueberries
  • 3 strawberries
  • 8 egg yolks
  • 2 cans condensed milk
  • 1 tsp lime zest
  • 1 cup lime juice

Meringue:

  • 1 egg white
  • 1/2 cup sugar
  • 1/4 cup water

Preparation

Preheat the oven to 400°F. Mix all the ingredients for the dough and use the dough to cover a 10-inch pie pan, leaving a border of dough of approximately 3 cm.

Whisk the yolks until light yellow and add the rest of the ingredients for the filling. Over the pie dough, add the egg yolk mixture and bake for 10 minutes or until set. Allow to cool and then put in the fridge.

For the meringue, put the sugar and water in a pot, and bring to a boil until the syrup reaches the thread stage (with a spoon, lift some syrup and a thread should be formed when falling from it). As the water boils, beat the egg whites until soft peaks form, and once the syrup is formed add it to the mixture slowly and beating non-stop. Beat until the meringue cools off.

Once the pie is cold, use the meringue to decorate around the dough with a pastry bag. Add the berries in the middle.
