Ingredients

(10 servings)

  • 3 eggs
  • ½ cup olive oil or coconut oil
  • 1 cup water
  • 80 drops stevia
  • ½ cup brown sugar
  • 1 tsp cinnamon powder with clove, nutmeg and powdered ginger
  • 1/4 cup chia seeds
  • 3 tbsp vanilla extract
  • 2 tbsp baking powder
  • 1 cup rice flour
  • 1 ½ cup almond flour
  • ½ cup cornstarch
  • 3/4 cup blueberries
  • ½ cup almonds
  • ½ cup walnuts
  • ½ unsalted peanuts
  • 1 tsp baking soda dissolved into 1 tsp apple cider vinegar

Preparation

Mix all the dry ingredients together with nuts and blueberries.

Then mix all the wet ingredients with the eggs and mix well.

Add the dry mixture to the liquid mixture, combine everything, and pour into a fruit bread mold with a capacity of around 2.2 lb.

Bake at 350°F for 45 minutes.
