GLUTEN-FREE CHERRY BROWNIE

Ingredients

  • 3 eggs
  • 3 tbsp olive oil or butter
  • 1 tsp baking powder
  • ¾ cup raw cane sugar or coconut sugar
  • ? cup dark chocolate chips
  • 4 tbsp cocoa powder
  • 1 cup almond flour (grind almonds in a food processor)
  • ¾ cup oat flour (grind oatmeal in a blender)
  • ¼ cup plant-based milk
  • ¾ cup chopped cherries
  • 1 handful chopped almonds

Preparation

Preheat the oven to 360°F.

Put the eggs, oil, baking powder, raw cane sugar, cocoa and plant-based milk in a bowl. Melt the chocolate chips in a bain-marie and add to the mixture. Once smooth, add the almond flour and oat flour, and mix well.

Finally add the chopped almonds and cherries, setting a few aside for decoration.

Put the mixture in an oven tray, previously greased or covered with a non-stick baking sheet, put the cherries on top for decoration, and then bake for 20-30 minutes or until you can insert a knife and it comes out clean.

Serve with fresh cherries or a scoop of ice cream.
