For the crust:
Dissolve the yeast and sugar thoroughly in warm water. It is very IMPORTANT than water is warm. Allow setting for 8 minutes. It will raise a bit and there will be some foam.
While the yeast is setting, begin to prepare the pizza ingredients.
Mix flour and salt in another bowl. Once the 8 minutes have passed, add the liquid ingredients to the flour and stir with a wooden spoon.
Sprinkle some flour over the table and knead for two minutes approximately. If the dough is too sticky, put flour in your hands and on the table.
Oil the baking pan with olive oil and roll out the dough into the desired shape with your fingertips or a rolling pin. Set aside.
For the toppings:
In a pot over medium heat, put 3.5 oz blackberries, previously mashed with a fork, 2 oz sugar, and stir constantly for 10 minutes. Allow cooling.
For the pizza:
Preheat the oven to 480°F so that it is very hot when you put the pizza inside.
Pour the blackberries and sugar mixture on the crust surface, spread the ricotta cheese with a spoon, scatter the mozzarella, blue, and mantecoso cheeses. Bake for 15 minutes in the lower part of the oven.
Once ready, decorate with fresh blackberries and some basil or arugula leaves.
