Ingredients

Yeast:

  • 2 1/2 tsp yeast
  • 1/4 cup warm milk
  • 1 tbsp sugar
  • 1 tbsp flour

Dough:

  • 1 lb flour
  • 3.5 oz margarine (it has to be soft)
  • 2 eggs
  • 3.5 oz sugar
  • 3.4 fl oz warm milk
  • 2 tsp vanilla extract
  • 1 tsp salt

Raspberry / blueberry glaze:

  • 4 tbsp raspberries / blueberries
  • 2 tbsp sugar
  • 5 tbsp powdered sugar
  • 2 tsp hot water

Preparation

Yeast:
Put all the ingredients together and allow to rest for 1 minute.

Dough:
First put the eggs and vanilla together. In a different bowl, put the flour, salt, sugar, and add the margarine at room temperature, then add the yeast and eggs mixture. Knead until all the ingredients are well combined. Once done, leave the dough in a bowl, covered and near a warm place for it to rise. Leave for around 30 minutes or until the dough has risen or softened.

Then roll out the dough until it is 1-cm thick (around 1 finger). Using a round cookie cutter, cut and then, with a smaller mold, make a smaller cut in the middle.

Place the donuts on an oven tray with a baking sheet, and leave covered near a warm place for 10 more minutes for them to rise.

Bake at 400°F for 10 to 15 minutes, until brown and risen. Allow to cool.

For the frosting:
Put the raspberries in a saucepan with 2 tablespoons of sugar. When it comes to a boil, remove from the heat and grind using a food processor, then strain.

Mix the hot water with powdered sugar, then add the raspberry sauce, until well combined.

Spread the glaze over the donuts and wait until it is solid. You may also put different decorations on each donut, before the mixture is cold.

Follow the same steps for the blueberry glaze.
