Cucumber, blackberry, and blueberry salad

Ingredients

  • 3 cucumber
  • 2 avocados
  • ½ cup blackberries
  • ½ cup blueberries
  • ½ cup walnuts
  • 4.4 oz grated mozzarella cheese
  • 1 handful arugula leaves (organic, ideally)
  • Pepper

Vinaigrette:

  • – 3 tbsp lemon juice
  • – ½ cup olive oil
  • – 2 tsp brown sugar
  • – a pinch of salt

Preparation

Cut the cucumbers in circles and put them on a serving plate. Add the washed and dried arugula and put the grated mozzarella cheese over it.

Split the avocados in half and put the 4 halves on the plate. Sprinkle the chopped walnuts over the salad, and add freshly ground pepper.

For the dressing, mix all the ingredients well.
