Dressing:
Wash and dry the sprouts and cress. Cut the goat cheese in thick rectangles and set aside.
Make a bed with soy sprouts on an individual plate and form a square with the goat cheese rectangles on top of it. Put the cress over the goat cheese, the blackberries, and top with a handful of alfalfa sprouts.
For the dressing, mix all the ingredients and stir well.
