Put a bone-in chicken breast covered with cold water in a pot. Add one onion cut into wedges, one carrot, a piece of celery, 1/2 bell pepper, coriander sprigs, salt and pepper.
Cook until the chicken is ready. Allow to cool and shred with your hands. Keep the broth until you want to use it.
Put the shredded chicken, 1/2 red onion, diced, 1/2 cup of different color bell peppers, diced, 10 grapes cut in halves, 10 cherry tomatoes cut in halves, 1/2 cup of blueberries, 1/4 cup of cranberries, a handful of chopped almonds, a handful of cashews, 1 unflavored natural yogurt, 2 tbsp of mayonnaise, 2 tbsp of honey, mustard, the juice of 1/2 lemon and salt in a bowl. Mix everything and serve over a bed of lettuce or in a sandwich.
