In a blender, blend the strawberries or raspberries with a tablespoon of plant-based milk, a few drops of lemon juice and honey to taste.
Place the mixture in a bowl, add the chia seeds and mix vigorously using a spoon. Add plant-based milk and stir for a few minutes. Allow the chia seeds to set for a couple of hours or overnight, until completely hydrated.
When serving, use a container or bowl and put chopped fresh fruit, the chia seeds pudding, peanut butter, more chopped fruit, a few fresh mint leaves and more honey, if necessary.
