FOR THE DOUGH:
Mix 7 oz of all-purpose flour, 3.5 oz of butter, 3.5 oz of powdered sugar (icing) and 1 small egg, without kneading. Make a dough (slightly sticky). Put in the fridge for 30 minutes.
FOR THE ALMOND FILLING:
Put 3.5 oz of almonds (do not peel) in a food processor, and process slightly. Add 3.5 oz butter or shortening, 3.5 oz of sugar and 1 teaspoon of almond extract (optional). Make a paste.
FOR THE CRUMBLE:
Use 1 cup of flour, 1 cup of sugar, 5.3 oz of butter and 1/2 cup of sliced almonds (can be chopped as well) to make a crumble.
Cover a square mold with parchment paper and oil as needed. Put the dough at the bottom. Cover with pitted cherries (to prevent tooth injuries while enjoying this wonder!). Cover with a few tablespoons of almond paste filling. Finish with the crumble on top.
Bake in the oven at 360°F for 50 minutes or until brown. Cut into squares and enjoy.
