Ingredients

  • 2 cup sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 3 cups grated carrot
  • ¾ cup physalis, cut into quarters
  • 2 cups sifted flour
  • 1 tsp baking soda
  • 2 tsp powdered cinnamon
  • 1 tsp baking powder
  • A pinch of salt

Preparation

In a large bowl, pour all the ingredients but the flour and physalis, and mix well using a beater. At the same time, preheat the oven to 350°F.

Once all the ingredients are mixed, incorporate the previously sifted flour, little by little, stirring constantly.

Once the mixture is done, add the quartered physalis and incorporate with folding motions.

Spread some butter in a baking pan and put in the oven for about 40 minutes. The oven must be preheated, and the total time will depend on the power of the oven. Therefore, you need to check the process from time to time.

To know if the sponge cake is done, insert a toothpick in it; if it comes out clean, you can take it out of the oven. Allow to cool and remove from the pan. To serve it, sprinkle some powdered sugar on top and decorate with physalis.
