½ cucumber (if large; if small use a whole cucumber)
3.5 oz feta cheese
Mixed greens
Salt and pepper
Olive oil and lemon juice to taste
Preparation
Hydrate the bulgur in 1 cup of boiling water (or according to the instructions on the packaging). Once done, crumble by hand. Season with salt, pepper, lemon juice and olive oil. Mix well.
Dice the cucumber and shred the feta cheese, add the bulgur, and then blackberries. Stir carefully.
Arrange some mixed greens in a dish, add some olive oil, the bulgur on top, and done. Serve.
