Ingredients

  • 1 lb 2 oz chopped apples
  • 7.4 oz blackberries
  • 1.7 fl oz water
  • 1 tsp cinnamon
  • 2 oz almonds
  • 4.5 oz flour (3 tbsp)
  • 5.1 oz brown sugar
  • 4.2 oz oatmeal
  • 7.4 oz vegan butter
  • 5.1 fl oz whipping cream
  • Juice of one lemon
  • 5.3 oz silken tofu

Preparation

Put the apples, blackberries and 1.6 oz brown sugar in a pot. Heat the mixture over medium heat until it starts to boil.

Cover with a lid and cook for 8 minutes or until the fruit softens. Add 3 tablespoons of flour and stir. Remove from the heat and put the contents in a baking dish.

Preheat the oven to 360°F.

Mix the butter, flour, remaining brown sugar, oatmeal and cinnamon in a container using a spoon.

Cover the mixture of fruit and cubes and bake for about 40 minutes or until the crust is brown.

To make the sour cream, mix cream, tofu and lemon, and beat until smooth.

Serve the crumble while warm, with a generous spoonful of sour cream.
