Berry jam:
Ham glaze:
For the jam:
Wash and dry the berries. Then put in a bowl with sugar and marinate for a few hours so that they release their juice. After a while, put everything in a pot and add the lemon juice. Cook over low heat. Once it starts boiling, stir often until the mixture thickens, for about 30-40 minutes. Set aside.
For the glazed ham:
Put the ham in an oven dish and put the cloves around the ham, forming a diamond. Mix the butter, Worcestershire sauce, honey, half of the orange juice, half of the sparkling wine, mustard, and berry jam in a bowl. Mix well and glaze the ham with it.
Put in the oven, preheated to 350°F, for 2 hours. Add the remaining orange juice and champagne little by little.
After 2 hours, allow to cool and cut slices of the desired thickness to serve.
