BEAN AND BLACKBERRY SALAD

Ingredients

(4 servings)

  • 1 cup beans, soaked overnight
  • ½ red onion
  • 3.5 oz fresh blackberries
  • 2 tbsp coriander, minced
  • Juice of 2 lemons
  • 2 fl oz olive oil
  • Salt and pepper to taste

Preparation

Cook the beans in abundant water until soft, remove and cool under running cold water. Drain well.

Julienne the onion and put in a bowl. Add the beans and coriander, mixing well.

Season with lemon juice, salt, pepper and olive oil. Once everything is well mixed, add the blackberries, mix again and serve.
