Ingredients

  • Abalones, sliced
  • Broad beans skinned
  • Peruvian corn
  • Pomegranates
  • Black sesame seeds
  • Edible flowers
  • Capers
  • Coriander sauce
  • Salt to taste
  • ½ cup coriander
  • 4 tbsp olive oil
  • ½ unflavored yogurt
  • 1 avocado
  • 2 tbsp chives
  • 1 scallion
  • 1 tbsp mustard
  • 1 lemon
  • 1 tbsp mayonnaise
  • 1 tbsp honey mustard

Preparation

Put in a blender 1/2 cup of cilantro, 4 tablespoons of olive oil, 1/2 unflavored yogurt, 1 small avocado, 2 tablespoons of chives, 1 scallion (with the green part), 1 tablespoon of mustard, and the juice of 1 lemon. Blend everything together and check the salt. Add the water necessary to reach the thickness you want.

Put 1 tablespoon of mayonnaise and 1 tablespoon of honey mustard in a plate, mix, and spread across the plate. Place the sliced abalones and cover with broad beans, skinned and cooked, some Peruvian corn, pomegranate, black sesame seeds, edible flowers, capers, coriander sauce, and avocado.
